The origin of the nougat is shrouded in mystery. It goes so far in China, and would bring it to the Arabs in the Mediterranean, Sicily, Spain and Italy.

The Cremonese support their authorship, in 1441, during the wedding banquet of Bianca Maria Visconti and Francesco Sforza, when it was packed with a crunchy sweet honey and almonds in the form of Torrazzo (bell tower of the cathedral of the city), which would take the name.

According to another tradition, however, were the ancient Romans to hand down the recipe for this gluttony (Latin torrere = toast). Towards the end of 1800 the confectioners Alba adopted the local Hazel (Piedmont Hazelnut IGP) as the main ingredient of their nougat creating a new and unique taste.
