Pure essence of a vintage, after more than 5 years on the lees.
Obtained from Pinot Meunier, Pinot Noir and Chardonnay grapes, this champagne shows a beautiful golden color, a remarkable vivacity on the nose - with notes of dried fruit and peach - and an excellent creaminess in the mouth, with an original final note of marine salinity.
With its low dosage (1g. Liter) and its dense structure, it goes very well with different types of dishes, even quite complex ones: from Japanese cuisine to fish carpaccio, foie gras, sole with truffles, potato or pumpkin gnocchi with sausage ragout.
Before disgorging, it remains on the lees for a minimum of 60 to 72 months and the bottles produced are just a thousand.
Gerard and Olivier Belin represent the fifth generation of this maison which is characterized by its balanced and pleasantly drinkable Champagnes. Their vineyards are all located in the Vallée de la Marne and in the vineyard they apply reasoned struggle and grassing.
