A red wine with a very elegant and fairly powerful bouquet, supple and discreetly tannic on the palate. This light composition gives it a feminine image. The Premier Crus, more robust, lack neither character nor power and require more prolonged aging. The Savigny wines call for light cuisine, red or white meats, even game birds. Only the premier crus will tolerate a slightly strong sauce.
Most people have never heard of Claude and Catherine Maréchal, although they deserve all the intention for any Burgundy lover. Claude Maréchal is the embodiment of a true “vigneron”, low key with an authentic vision of the vine growing with no chemicals and the use of indigenous yeast, with total manual labor and a perfectionist way of working in the cellar. His wines are purity encapsulated, with low new oak use and no whole bunches. The quality of the production at Domaine Maréchal stands out in the crowded pool of top Burgundy producers nowadays.
