LA BOURGEOISE Sancerre Blanc Silex
Grape variety: Sauvignon Blanc
Location of vineyards: this wine comes from old Sauvignon vines that grow on silica slopes. Historically, the names of these plots, previously worked by the monks of Saint-Satur, were called "Les Bourgeoises". This is the reason why in the eighties this name was given to the cuvées born from these plots.
Soil: Silica (Silex).
Vinification: upon arrival in the cellar the grapes are pressed and after sedimentation at low temperatures, part of the wine is fermented in temperature-controlled stainless steel tanks, while the other part in Troncais barrels. Followed by refinement on the fine fermentation yeasts with bâtonnage for 7/8 months, before bottling.
Organoleptic characteristics:
Smell: Aromas of flint and spices combine with fruity notes.
Taste: Wine with an exemplary balance, of an unequal finesse and concentration, it will express its elegance along its evolution in the bottle for 10 - 12 years.
Pairings: it goes well with fish, white meats and slightly spicy preparations.
