A very original Blanc de Blancs, taut and dry like few others.
Produced with only “vins de réserve”, a selection of wines ready but judged suitable to reveal their potential only after another couple of years on the lees. Dosage 5.5 g / l
A truly original Champagne, taut and dry like few others. These aspects are mainly due to the singular place where the vines are planted, on the gentle slopes of Montgueux, in the Aube. At 270 m. above sea level, these small hills about ten kilometers from Troyes are characterized by their particularly chalky subsoil. It is the homeland of Chardonnay, with the vines forced to expand their roots in depth and with the porosity of the gypsum that avoids water stress.
Once harvested, the grapes are pressed for each single parcel and the vinification is strictly natural. Even for its simpler cuvées, the Velut family lets the wines "rest" for at least 30 months, double the minimum required by the disciplinary.
The Velut family pays particular attention to respect for the land, the grass is left to grow and then mowed, while the regular hoeing is carried out only under the rows. In the autumn-winter period, when the vine is at rest, mixtures of legumes, cereals and vegetables are sown that enrich the earth and fertilization takes place with natural elements such as bark, guano and compost.
