Soils: siliceous (Silex)
Yield: 35hl / ha.
Fermentation: With the greatest respect for the ancient methods, was drawn Sancerre d'Antan, without filtration or fining.
Originally, a small portion of Sauvignon was planted in 1936 on the slopes richest silica. Low yield, fermentation in barrels for 4, 5 or 6 months and then aging on the lees.
Only two transfer ports are made respecting the lunar cycle before the 'bottling.
Tasting: This wine, very generous, is characterized by mineral notes (due to its origin and to the ground), and fresh fruit. Concentrated and full of great elegance, this
wine is very pleasing to both young, and even after 10 years of stay in the cellar.
Pairing: It goes beautifully with seafood, fish and white meat. Roasted lobster, veal sweetbreads skewered with truffle sauce. Among the cheeses, you can have fun with many valuable products but, given a choice, a Vacherin Mont Dor will be a perfect match.
