Obtained from fresh thighs of pigs born and reared exclusively in Italy, in the Natural Park of the Oglio River, fed only with eco-sustainable and short chain cereals. These extra-heavy Padana pigs reach a weight of about 300 kg and give a very high quality meat.
The particular size also requires extreme care during the whole seasoning phase, which lasts much longer than the other types of ham, always going to exceed at least 36 months before being sold. Obviously the quantity is rather small and we cannot always guarantee its availability. When there is, however, it is a product to truly taste!
